Intermediate Knife Forging Class - 2 Day.
Join me in my West Auckland workshop, to get your hands dirty, and forge your own one of a kind Chef / Nakiri kitchen knife. More is more in my world, so two days means a larger knife, and more hands on with construction.
We will start day one with a hot coffee and some health and safety chat. Sketch out a design, then cut some steel while the gas forge heats up. Now the real work begins, heating and beating, slowly moving the steel by hand to form the rough profile of your knife. From here we refine the shape on the grinder, then back to the workshop to heat treat and harden the blade. From here, the blade will be tempered for several hours, but if time allows, we can make some headway with handle construction.
Day two starts with grinding away steel, refining your blade and setting the edge geometry to ensure it will perform well in the kitchen. Choose from a selection of native timbers and brass, to then assemble and fasten your handle materials. After a short break we will sculpt the handle on the belt sander to comfortably fit your hand. Once we finish sanding and cleaning up the completed knife, it’s time to soak the wooden handle in oil, to bring out and protect the natural beauty. With one last sharpening of the knife, it’s ready to work!
This class runs from 9am to 5pm, both days. Drinks and snacks provided, but please bring a packed lunch for each day. Basic protective equipment available, but bring your own if you prefer. Suitable workwear and close toed shoes recommended, and workshop confidence is a must.
