





Hand Forged ‘Honesuki’ Boning Knife
This hand forged carbon steel boning knife, is directly inspired by a Honesuki knife I came across while sharpening for another chef. Traditionally for boning poultry, this is my preferred boning knife and a great addition to any knife collection. They handle is stabilised Tulip wood that was collected in West Auckland, and complimented with copper rivets. Blade is 15cm from tip to heel.
This knife is designed and ground for boning meat, and for cutting close to the tip. A light and agile knife for processing meat.
